Does anyone know of an application or website that will allow me to surf the web, as someone would in Spain? (i.e. if I go to Google.es and type in a query, I will get the results of a Spanish IP Address). Thanks.

There are a number of companies with products that mask your I.P. address with another. One that allows you to select the specific IP country is Ghost Surf by Tenebril.

Just go to www.google.es and select "pages from España" before hitting the Google Search button, it can't get any simpler...

If your needs are not limited to Google, you might want to use a spanish proxy.
You can try using Tor (onion routing). I think it gives you an option of selecting IP addresses from a particular region, so when you are browsing you are using that region's ip address.

My choice would be either a SSH tunnel via Spanish host (could be tracked, more reliable, gives you more credibility, no "de-facto" anonymity) or TOR (anonymous, no very reliable, low connection speed).

I like the idea of TOR, but you may also want to look into the use of a free (less reliable) or pay-for-use (more reliable) proxy server in the region of interest. Point your browser settings to the proxy and away you go.
You may also want to change your browser/pc settings to use the ES language pack in case the web servers you are accessing look at the configuration of your browser before presenting a page.

What are you exactly trying to achieve? Do you want web sites to return pages and search results in Spanish and related to Spain or do you want to pretend you are browsing from Spain irrespective of the language of the web site?
If you want to achieve the former, you just need to change the browser's accepted language and make Spanish the first language it will accept. This will not change the browser's menu or dialogue language but will tell web sites to return pages in Spanish if they can.
If you are using Firefox, here's how to do it:
- Go to Tools -> Options
- Click on the 'Content' icon on top of the window
- At the bottom of the window, in the Languages section, click on Choose
- Select 'Spanish/Spain [es-es]' in the drop-down box and click on 'Add'
- Click on 'Move Up' until Spanish is at the top of the list
If you are using Internet Explorer:
- Go to Tools -> Internet Options
- In the General tab, click on the 'Languages' button at the bottom of the window (just above Cancel)
- Click 'Add'
- Select 'Spanish (Traditional Sort) [es]'
- Click OK
- Click 'Move Up' until Spanish is at the top of the list
Otherwise, if you really want to pretend you are browsing from Spain irrespective of the language, the proxy options suggested above are the way to go.
